Lazy engineer yogurt: Use type 5 plastic yogurt tubs (they can stand heat.) Fill with milk, steam (on a rack, over water, in a large covered pot, with water simmering) for an hour or so, let cool for another 2 hours or cool faster by plunging in cold water if in a hurry. Ta-dah, you've sanitized the containers and heat-treated the milk (which makes for better yogurt; research-supported.) But you have very low odds of boiling or burning the milk this way. When down under 120F, stir in a tablespoon of starter for each quart - then place in dehydrator set to 95F (common "110F" suggestion appears to be from industrial process where speed is of the essence) and leave for 24 hours. No dehydrator - set in cooler or other well-insulated box - start a bit warmer, let it cool through time.
